Weigh some gypsum into beaker. Record the weight.

Put beaker into oven overnight.

Weigh beaker after heating and subtract weight of empty beaker.

Divide weight of plaster by weight of gypsum: (after heating)/(before heating).

Compare to theoretical weight of 84%.
